And I wanted a treat, but one that didn’t undo all the hard work.

Is it keto? I don’t do keto, so I can’t answer this for sure. I’m guessing that it isn’t.

It’s difficult to pinpoint the exact moment when cottage cheese desserts went viral, as they’ve been around for quite some time.

However, in recent years there has been a trend towards healthier, protein-packed desserts, and cottage cheese has become a popular ingredient in these types of recipes.

The rise of social media platforms like Instagram and Pinterest has also helped to spread awareness of these types of recipes, as food bloggers share their creations with their followers.

Recipes like this Cottage Cheese Chocolate Pudding have gained popularity as people are looking for healthier alternatives to traditional desserts. And, this pudding could easily be frozen and served as nice cream.

I first found this recipe in Health Magazine, and have made it many times. It’s so good!

Combine chocolate and milk in a small microwave safe bowl, and microwave on high for 30 seconds. Stir. If needed, microwave an additional 15 seconds. Stir until smooth. Cool slightly.

Combine cottage cheese, cream cheese, powdered sugar, cinnamon, and vanilla in food processor or blender, and blend until very smooth, scraping down the sides once or twice.

I find the food processor easier to use for this pudding. And, you can get all of the mixture out when it’s done. But either will work.

Blend on high until it’s creamy and smooth; it doesn’t have to be completely lump free.

Add chocolate mixture, and continue to process until smooth and blended.

Spoon half of the mixture, or about 1/3 cup pudding into each of 2 serving dishes. For a thicker pudding, leave them in the fridge for a few hours or overnight to allow them to set more.

Top with chocolate shavings.

The easiest way I’ve found to do chocolate shavings is simply take a vegetable peeler to the side of a chocolate bar. You’ll get pretty little shavings.

FAQ

Can I use a different type of sweetener?

Yes, the powdered sugar will have a nice light consistency and neutral sweet flavor, so it’s what I recommend for this pudding.

But if you prefer an unrefined sugar use maple syrup or honey. Golden syrup, Stevia, or Swerve will also work.

Can I leave the sugar out?

I’ve made it before without any sweetener. It’s still good. Maybe just not as much of a dessert. A little flatter flavor, maybe.

So, if you’re used to unsweetened desserts, you may like it. But if you’re looking for a sweet dessert treat, the small amount of sugar here is the way to go.

Of course, you could always make the pudding without the sugar, blending it up, taste it, and decide if you want it sweeter.

Can I use a different type of milk?

Yes, you can use a plant-based milk.

Though there are still a couple other dairy ingredients in the recipe. They make vegan cottage cheese and vegan cream cheese now.

Though I haven’t tested them in this recipe, I’m sure it would all work. And, if you’re used to vegan alternatives, the flavors would be fine for you. Vegan swaps often have a slightly different flavor, and they can seem “off” if you aren’t used to them.

So, yes, you can make this Easy cottagecheesechocolatepuddingrecipe vegan by substituting the dairy products.

Change up the recipe

This recipe is so good you’ll be coming up with all sorts of ways to change the flavors. Let me start you with some ideas!

You can eat this for breakfast, as a light snack, or as a healthy dessert treat that will satisfy your chocolate cravings without all the unwanted calories.

Add in some protein powder to boost the protein even more. And, use different flavors of powder – chocolate, vanilla, mint. I’ve also seen it called cottagecheeseprotein mousse.

Use instant coffee or instant espresso instead of the cinnamon. Also, I’ve used coffee instead of milk – saves some calories and is really good!

Mix in some chocolate chips, mini chocolate chips, or cacao nibs.

Stir in some peanut butter or almond butter.

Add in some peppermint extract and leave out the cinnamon for a chocolate mint pudding.

Turn it into a cottagecheesechocolatedip, and dunk cookies, graham crackers or fruits into it!

Can I add any toppings to this pudding?

Fruits always make a delicious addition.

Toasted nuts are delicious. My first pictures have pecans on them. Also try almonds, walnuts, pistachios, toasted coconut, or hazelnuts.

Drizzle peanut butter or chopped up peanut butter cups over the top.

Crush up a cookie, some graham crackers, or granola as a topper.

And a dollop of whipped cream or coconut whipped cream is always a yummy addition.

How long does this pudding last in the fridge?

Keep it in the fridge, covered, for up to 5 days. It will get thicker as it sits as well.

Can I freeze this?

Yes, you can freeze this and get a chocolate nice cream! Just know that the texture isn’t as soft and creamy as regular ice cream. It’ll be a bit icy.

And, if it’s frozen overnight or longer, you’ll probably need to set it on the counter for about 10 minutes to soften so you can scoop it.

Do you taste the cottage cheese it in?

I’m always amazed that people don’t like cottage cheese. I just love it so much! So, I don’t taste the cottage cheese, but I’d say that if you don’t like it, maybe pass on this recipe.

Although it’s a great way to up the protein and get less sugar, I’d suggest something without cottage cheese like my Vegan Chocolate Mousse Cups, Carob Fudge bites, or Chocolate coconut bites.
