How to Make Chocolate Peppermint Cookies

Mix together wet ingredients

Cream together the butter and sugars in a large bowl. Then mix in eggs, vanilla and peppermint extract until smooth.

Mix dry ingredients

In a separate bowl, whisk together the flour, cocoa, baking soda, baking powder, and salt. Slowly pour the flour mixture into the wet mixture and stir just until combined. Fold in the chocolate chips and refrigerate the dough for 15 to 20 minutes.

Bake in oven

Remove dough from fridge and scoop onto the baking sheet using a large cookie scoop. Bake for 8 to 10 minutes or until the edges are slightly crisp, yet soft in the middle. Allow the cookies to cool on the pan for a couple of minutes, then move to cooling rack.

Decorate the cookies

Once the cookies have cooled completely, begin to decorate if desired. Dip the cookies halfway into the melted white chocolate and place on wax paper to dry. Then immediately sprinkle crushed peppermint on top of white chocolate.

Baking Tips

  • Refrigerate the dough. This helps the cookies stay thick and chewy. Aim for at least 15 minutes, but 20 to 30 minutes is ideal.
  • Make them evenly sized. These are big cookies! To measure correctly, use a large cookie scoop or 2 Tablespoons.
  • Don’t over bake. The centers should still look soft when you take the cookies out of the oven. They’ll set as they cool and will be perfectly fudgy and delicious.
  • Decorate your cookies!Although this step is optional, I definitely recommend it. The white chocolate coating adds the perfect hint of sweetness, while the crushed peppermint adds extra flavor and texture.

These cookies are absolutely delicious! Made a batch last night for my spouse’s office party and they are yummy and very easy to make. The cookies look so nice (you don’t even necessarily need to do the white chocolate/peppermint addition but I recommend that you do because it gives it that perfect holiday platter razzle dazzle 😊) and also spread beautifully even after a short chill time which makes this recipe perfect for a last minute dessert need Will be adding this to my normal holiday cookie platter rotation for sure. Thank you so much for sharing this recipe!

I’m so glad I found this recipe and I’m so grateful for all comments as well, because of them I decided to try this particular recipe and I’m so glad I did. I won’t even look for any other recipe again. This definitely a keeper! Very easy step by step instructions simple ingredients and perfect delicious result. Plus only 20 min in n the fridge required to keep dough which is very convenient, other recipes I red 3 hour plus required. I follow recipe only I add 1 tea spoon espresso powder and I used mini chocolate chip which was n my opinion melted more than regular size chocolate chip. From following ingredients I got 28 beautiful delicious cookies size about 3*3 inches. I used for decorating melted nestle house white chip and crushed almost to the powder peppermint hard candy plus Christmas sprinkles as well. Overall it’s PERFECT i strongly recommend to try everyone who wants perfect delicious easy to made cookies. My 3 y.o 5 y.o loves them as well. Should I use baking soda or baking powder in cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

What makes cookies chewy and not hard? ›

Different types of sugars affect the texture because they absorb different amounts of water. Remember moisture is the key! White sugar creates crispier cookies and brown sugar creates chewier cookies.

What is the secret to chewy cookies? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

Is 350 or 375 better for cookies? ›

We've found that the optimal temperature for cookie baking is 350F. It gives the butter in the dough time to melt and lightly spread before the remaining ingredients cook through.

Is it better to bake chocolate chip cookies at 350 or 375? ›

A lower temperature will require more cooking time and will ultimately result in a thinner, crisper chocolate chip cookie. For those ooey, gooey chocolate chip cookies, 375 degrees Fahrenheit is your sweet spot.

Should cookie dough sit before baking? ›

But there's one rule that works for just about every chocolate chip cookie dough recipe, and it's the answer to a common cookie baking question: Does resting your cookie dough make better cookies? The short answer is: Yes. Resting your dough in the refrigerator will almost always yield better results.

Can you beat cookie dough too long? ›

Overmixing the dough: Overmixing can lead to tough and dense cookies. It's essential to mix the ingredients just until they come together to avoid developing too much gluten.

What makes a cookie soft vs crunchy? ›

The ingredients you use and how you shape your cookies both play an important role in whether your cookies turn out crispy or chewy. The type of flour and sugar you use, if your cookie dough contains eggs, and whether you use melted or softened butter all factor into the crispy-chewy equation, too.

What ingredients keep cookies soft? ›

To keep it simple, cookie recipes that contain a lot of butter, brown sugar or egg yolks are going to yield soft and chewy cookies, because those ingredients add moisture and retain it for a longer amount of time.

        What softens a cookie? ›

Just wrap a cookie or two in a damp paper towel and then put them in the microwave for about 10 to 15 seconds. The moisture from the paper towel should soften the cookies right up. So if you wonder how to soften hard cookies quickly? Microwave is the way!
